These No Bake Chocolate Chip Cookie Dough Protein Bites may just hit the spot!

Servings 25 bites.

Ingredients:
½ cup almond flour.
½ cup protein powder.
1/8 cup tapioca flour.
¼ tsp salt.
½ cup nut butter.
¼ cup maple syrup.
½ tsp vanilla extract.
1-4 Tbsp water.
¼ cup mini chocolate chips.
½ cup chocolate (for melting).
1 tsp oil of choice – optional.

Instructions:
1. In a large bowl, whisk together the almond flour, protein powder, tapioca flour, and salt.
2. Add in the nut butter, maple syrup, and vanilla extract. Stir until as much of the dry ingredients are incorporated into the wet.
3. Add water 1 Tbsp at a time, stirring after each addition, until your reach a cookie dough consistency.
4. Fold in the mini chocolate chips.
5. Roll a heaping tablespoon of dough in a ball and place on the prepared cookie sheet tray (freezer or parchment paper).
6. Place in freezer for about 2 hours, or until they are firm. They don’t have to be frozen all the way through.
7. Melt your chocolate of choice in microwave safe bowl in 30 second increments, stirring after each, until the chocolate is melted.
8. Optional: Stir in the oil.
9. Dip each ball into the melted chocolate and then return the coated ball to the lined cookie tray.
10. Return the tray to the freezer for about 10 min. or until the chocolate is set.
11. Enjoy these treats straight from the freezer, allow them to defrost for about 5 min. for a softer bite, or even store them at room temp for a super soft and doughy treat!
